
Valentine’s Day Treats: The Ultimate Chocolate Lava Cake
Valentine’s Day is right around the corner, and that means that it is time to spoil your significant other.
Nothing says ‘I love you’ more than a home-cooked meal – except, perhaps, an indulgent, home-cooked dessert!
If you are planning on spoiling your loved one with something sweet and special this Valentine’s Day, then you need to look no further than this delicious, dreamy and oh-so decadent chocolate lava cake.
Soft, chocolate sponge cake, bursting with creamy, chocolate goodness, this cake is sure to capture your lover’s heart – and stomach!

Ingredients:
(makes six)
250 g dark or milk chocolate, finely chopped
3 eggs
3 egg yolks
2 tablespoons of butter
¾ cup of butter
½ cup of sugar
1 tablespoon of all purpose flour
1 teaspoon vanilla essence
Method:
Start by greasing 6 ramekins using the two tablespoons of butter, and place the ramekins on a baking tray.
In a small saucepan, combine the chopped chocolate with the ¾ cup of butter. Melt the butter and chocolate together over a low heat until melted, and set aside.
In a large mixing bowl, combine the beaten eggs along with the egg yolks. Then, add the sugar and vanilla essence to the mixture. Mix with an electric or hand whisk for about 5 minutes until the mixture is lemon coloured and thick.
Fold half of the chocolate mixture into the egg mixture and mix well. Thereafter, mix the remain chocolate mixture and flour into the egg mixture.
Next, slowly and evenly spoon the mixture into the ramekins, about ¾ full.
Bake at 220° Celsius for 12 minutes until the outside of the cake is firm. Allow to cool for 3 minutes.
Remove the cakes from the ramekins and serve on dessert plates. If you wish, you can sprinkle powdered sugar on top, and add berries or mint leaves.
