
The Easiest & Most Delicious Vegetarian Pasta Dish
Many people have the misconception that ‘vegetarian’ means boring, mundane and bland. However, that is not the case at all!
May vegetarian dishes don’t get the recognition they deserve in the culinary world because they lack meat. And while meat certainly adds flavour to a dish, there are hundreds of vegetarian dishes that can give meat dishes a run for its money.

Leaving the meat out of a dish can bring the average price of a meal down significantly. Especially in these times we live in now where drought is plaguing the world and the price of meat has shot up, it is good to incorporate some meat-free dishes into your weekly meal plan.
One of the easiest, cheapest and most delicious vegetarian dishes to make is vegetarian pasta. You get all the goodness of a hearty bowl of pasta sans the added price tag of meat!
Here is the recipe for one of our favourite vegetarian pasta dishes that is easy to make and amazing to eat.
Creamy Mushroom, Spinach and Asparagus Pasta
Ingredients:
250g white button mushrooms, chopped
150g baby spinach leaves
100g green asparagus, chopped
250ml cream
1 onion, chopped
1 garlic clove, crushed
Olive oil
Salt
Pepper
Pasta of your choice (linguine works best)
Method:
Start by sauteeing the onions along with the garlic and olive oil in a pan. Once the onions are translucent, add in the chopped mushrooms.
Add salt and pepper to taste.
Once the mushrooms start to brown, add the asparagus and drizzle more olive oil into the pan.
In a separate pot, start cooking your pasta until al dente.
Once the asparagus and mushrooms look fully cooked but not soggy, add the cream to the pan and stir. Bring the heat down and allow to simmer for 5-7 minutes. After the simmer, add the baby spinach leaves and stir through until they are slightly wilted.
Hint: If you desire a thicker consistency, add a tablespoon of cornstarch or flour to the cream mixture and stir until there are no lumps.
Dish the pasta into bowls and pour the sauce mixture over. Mix well and serve with ground black pepper, sea salt and parmesan if you want.
