Hearty soups for winter

The real winter is ahead of us and there is nothing nicer than having a warm, hearty, homemade soup on a chilly winter’s evening. 

Here are two of the best, most tasty and easy to make hearty winter soups you should definitely try: 

  1. Bacon and Corn Chowder

Chowder is kind of like a hybrid between a soup and a stew and this one is packed full of flavour!

Ingredients: 

1 pack bacon

1 pack frozen corn

1 celery stick

1 onion

1 green / red pepper

1 litre milk

1 cup of cheddar cheese

Salt 

Pepper

Start by baking or frying the bacon until crisp. Leave to cool and crumble into pieces. Fry the onions, celery, peppers and half of the corn in a pan until the veggies are nice and tender. 

Place rest of the corn along with one cup of milk in a blender and blend until smooth. 

Add this mixture into the pan with the veggies and add another cup of milk. Stir continuously for about 5 minutes. Then add the cheese and stir in until it melts. 

Pour the chowder into bowls and add the crumbled bacon bits. Add salt and pepper to taste. 

  1. Super creamy tomato soup

This tomato soup is super creamy and super delicious. And have we mentioned the health benefits of tomatoes? An Italian classic. 

Ingredients: 

Vegetable stock (enough for 500ml)

1 can diced tomatoes

250ml heavy cream

Fresh Basil leaves

Salt 

Pepper

Start by making the stock and forming a broth. Then, combine the broth and tomatoes in a saucepan over medium heat. Stir occasionally for about 4 – 5 minutes. 

When mixed through, add the cream and stir through. Reduce the heat to low and let the soup simmer for approximately 15 minutes. Add salt and pepper to taste, all while stirring occasionally. 

Serve the soup in bowls and garnish with fresh Basil leaves.
