Baked veggie chips

Everyone loves potato chips. They are the perfect snack for just about anything but unfortunately are quite high in the calorie and fat department. 

An equally delicious, yet way healthier option is veggie chips. They look just like potato chips except they are made of, well, veggies. 

Here is a great recipe to ease you into the magical world of veggie chips. 

Ingredients: 

2 parsnips, peeled

2 sweet potatoes, peeled

2 purple beets, peeled

Sea salt

Olive oil

Start by slicing the veggies just as you would a potato. They need to be sliced about 2cm thick. 

Place all the sliced veggies on a paper towel and then sprinkle generously with sea salt. Allow to stand for about 15 minutes. This is so the veggies can absorb the salt, which gives them more flavour.

Blot them dry and place them on a baking tray that is slightly spread with olive oil. Sprinkle them with sea salt again. 

Bake the veggies until crisp at 200 degrees celcius for about 20 – 25 minutes. 

Once you remove them from the oven, sprinkle with salt again and allow to cool for 5 minutes.
